Perfect for a casual lunch or dinner, it brings together smoky, sweet, and fresh flavors with a touch of peppery arugula and optional balsamic drizzle for an irresistible bite.

  • 1/2 cup BBQ sauce (Sweet Baby Ray’s Sweet Vidalia Onion recommended)
  • 1 package pizza dough (homemade or store-bought, enough for 4 flatbreads)
  • 1/2 cup goat cheese, crumbled
  • 4 radishes, thinly sliced
  • 1 cup baby arugula
  • 1 tablespoon balsamic vinegar (optional)


Instructions

  1. Preheat Grill: Prepare your gas grill for indirect medium heat, ensuring one side of the grill is on medium and the other is off for indirect cooking.
  2. Prepare Dough: Divide the pizza dough into 4 equal pieces and press each piece into a flatbread shape about 1/4 inch thick.
  3. Cook Flatbread Base: Place each flatbread on the hotter side of the grill and cook until the bottom side is nicely browned, about 2-3 minutes.
  4. Add Toppings: Flip the flatbread so the cooked side is up and spread a generous layer of BBQ sauce on top. Then evenly distribute shredded rotisserie chicken, crumbled goat cheese, and thinly sliced radishes.
  5. Finish Cooking: Move the flatbreads to the cooler indirect side of the grill and close the lid, cooking until the cheese melts and the toppings warm through, approximately 4-5 minutes.
  6. Garnish and Serve: Remove flatbreads from the grill, top with fresh baby arugula, and drizzle with balsamic vinegar if desired. Serve immediately and enjoy!
