- 4 radishes, thinly sliced
- 1 cup baby arugula
- 1 tablespoon balsamic vinegar (optional)
Instructions
- Preheat Grill: Prepare your gas grill for indirect medium heat, ensuring one side of the grill is on medium and the other is off for indirect cooking.
- Prepare Dough: Divide the pizza dough into 4 equal pieces and press each piece into a flatbread shape about 1/4 inch thick.
- Cook Flatbread Base: Place each flatbread on the hotter side of the grill and cook until the bottom side is nicely browned, about 2-3 minutes.
- Add Toppings: Flip the flatbread so the cooked side is up and spread a generous layer of BBQ sauce on top. Then evenly distribute shredded rotisserie chicken, crumbled goat cheese, and thinly sliced radishes.
- Finish Cooking: Move the flatbreads to the cooler indirect side of the grill and close the lid, cooking until the cheese melts and the toppings warm through, approximately 4-5 minutes.
