Description

A zesty and flavorful Tex-Mex side dish, Rotel Rice is a simple one-pot recipe combining long grain rice with Rotel diced tomatoes and green chilies. This dish is easy to prepare and makes a great accompaniment to any Mexican-inspired meal.


Ingredients

Main Ingredients:

  • 1 tablespoon olive oil or butter
  • 1 small onion, chopped
  • 1 cup long grain white rice
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
  • 1 3/4 cups chicken or vegetable broth
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin (optional)
  • Salt and black pepper to taste

Garnish:

  • Chopped cilantro or shredded cheese (optional)

Instructions

  1. Saute Onion: In a medium saucepan, heat olive oil over medium heat. Add chopped onion and cook until softened.
  2. Toast Rice: Stir in the rice and cook to lightly toast.
  3. Add Ingredients: Add Rotel, broth, garlic powder, cumin, salt, and pepper. Bring to a boil.
  4. Simmer: Reduce heat, cover, and simmer for 18–20 minutes until rice is tender.
  5. Rest and Garnish: Remove from heat, let sit for 5 minutes. Fluff with a fork and garnish with cilantro or cheese.

Notes

  • For a heartier dish, add cooked ground beef, black beans, or shredded chicken.
  • You can use brown rice—adjust liquid and cook time accordingly.
