Description

Delight in this exquisite Rose Pistachio & Saffron Fudge, a creamy white chocolate treat infused with luxurious saffron, fragrant rose water, and warming cardamom. Topped with crunchy pistachios and edible rose petals, this Indian-inspired dessert is perfect for festive occasions and quiet indulgences alike.

Ingredients

Fudge Base

  • 2 cups white chocolate chips
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 teaspoon saffron threads
  • 1 tablespoon warm milk (for soaking saffron)
  • 1 teaspoon rose water
  • 1/2 teaspoon ground cardamom
  • Pinch of salt

Toppings

  • 1/2 cup shelled pistachios, roughly chopped
  • 2 tablespoons dried rose petals (culinary grade)

Instructions

  1. Soak Saffron: Place the saffron threads in 1 tablespoon of warm milk and set aside for 5 minutes to allow the saffron to release its vibrant color and aroma.
  2. Melt Chocolate Mixture: In a medium saucepan over low heat, combine the white chocolate chips and sweetened condensed milk. Stir continuously until the chocolate melts completely and the mixture is smooth and homogeneous.
  3. Flavor the Fudge: Add the saffron-infused milk, rose water, ground cardamom, and a pinch of salt to the melted chocolate mixture. Stir thoroughly to blend all the flavors evenly.
  4. Fold in Nuts and Petals: Gently fold in the chopped pistachios and half of the dried rose petals into the fudge mixture, ensuring even distribution without deflating the texture.
  5. Set the Fudge: Pour the mixture into a parchment-lined 8×8-inch pan, smoothing the surface with a spatula. Sprinkle the remaining rose petals and a few extra pistachios over the top, pressing them lightly into the fudge.
  6. Chill Until Firm: Refrigerate the fudge for at least 3 hours or until fully set and firm enough to cut.
  7. Serve: Once set, cut the fudge into small squares and serve chilled. Allow pieces to rest at room temperature for 10 minutes before serving for optimal texture and flavor.

Notes

  • Use high-quality white chocolate and culinary-grade rose petals to maximize flavor and visual appeal.
  • Store the fudge in an airtight container in the refrigerator for up to one week to maintain freshness.
  • Allow the fudge to sit at room temperature for 10 minutes before serving for a softer, more enjoyable texture.
