Ingredients
Chicken:
4 bone-in, skin-on chicken thighs
Seasoning:
2 tablespoons olive oil
2 tablespoons za’atar spice blend
1 teaspoon garlic powder
1 teaspoon lemon zest
1 tablespoon lemon juice
1 teaspoon salt
1/2 teaspoon black pepper
Additional:
1 small red onion (sliced)
fresh parsley for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 400°F.
- Prepare the chicken: Pat the chicken thighs dry with paper towels.
- Mix the seasoning: In a small bowl, combine olive oil, za’atar, garlic powder, lemon zest, lemon juice, salt, and pepper.
- Season the chicken: Rub the seasoning mixture all over the chicken, ensuring to get some under the skin.
- Roast: Place the chicken thighs skin-side up on a baking sheet with red onion slices around. Roast for 35–40 minutes until the chicken reaches 165°F.
- Rest and garnish: Let the chicken rest for 5 minutes before serving. Garnish with fresh parsley if desired.
