Ingredients
Sweet Potatoes:
- 2 large sweet potatoes (peeled and cut into 1-inch cubes)
Seasoning:
- 2 tablespoons olive oil
- 3 garlic cloves (minced)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/4 cup grated Parmesan cheese
Garnish:
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat Oven: Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss Ingredients: In a large bowl, toss sweet potato cubes with olive oil, garlic, salt, pepper, and smoked paprika until coated.
- Roast: Spread potatoes on the baking sheet in a single layer. Roast for 25–30 minutes, flipping halfway, until golden and tender.
- Add Parmesan: Sprinkle Parmesan over the potatoes during the last 5 minutes of baking.
