Ingredients
For the Roasted Radishes:
- 1 lb (450g) radishes, trimmed and halved
- 2 tbsp olive oil
- Salt and pepper to taste
- 1/2 tsp dried thyme (optional)
- 1/2 tsp garlic powder (optional)
For the Garlic Chive Yogurt:
- 1/2 cup plain Greek yogurt
- 2 tbsp fresh chives, finely chopped
- 1 clove garlic, minced
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). In a bowl, toss the halved radishes with olive oil, salt, pepper, thyme, and garlic powder (if using) until well-coated.
- Arrange the radishes in a single layer on a baking sheet, cut side down, for the best caramelization.
- Roast in the preheated oven for 20-25 minutes, or until the radishes are tender and slightly browned around the edges, stirring halfway through.
- While the radishes are roasting, prepare the garlic chive yogurt by mixing the Greek yogurt, fresh chives, minced garlic, lemon juice, salt, and pepper in a small bowl.
- Once the radishes are done, remove them from the oven and transfer to a serving platter.
- Drizzle the garlic chive yogurt over the roasted radishes and serve immediately.
