Ingredients

For the Roasted Radishes:

  • 1 lb (450g) radishes, trimmed and halved
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 tsp dried thyme (optional)
  • 1/2 tsp garlic powder (optional)

For the Garlic Chive Yogurt:

  • 1/2 cup plain Greek yogurt
  • 2 tbsp fresh chives, finely chopped
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C). In a bowl, toss the halved radishes with olive oil, salt, pepper, thyme, and garlic powder (if using) until well-coated.
  2. Arrange the radishes in a single layer on a baking sheet, cut side down, for the best caramelization.
  3. Roast in the preheated oven for 20-25 minutes, or until the radishes are tender and slightly browned around the edges, stirring halfway through.
  4. While the radishes are roasting, prepare the garlic chive yogurt by mixing the Greek yogurt, fresh chives, minced garlic, lemon juice, salt, and pepper in a small bowl.
  5. Once the radishes are done, remove them from the oven and transfer to a serving platter.
  6. Drizzle the garlic chive yogurt over the roasted radishes and serve immediately.

Notes

  • Roasting radishes brings out their natural sweetness and softens their typically spicy flavor.
  • For extra creaminess, you can add a tablespoon of olive oil to the garlic chive yogurt mixture.
