Ingredients
Potatoes:
- 2 pounds Idaho potatoes, cut into 1-inch cubes
Roasted Garlic:
- 1 whole head of garlic
- 3 tablespoons olive oil, divided
Seasonings:
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
Garnish:
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C).
- Roast the garlic: Slice the top off the garlic head, drizzle with 1 tablespoon of olive oil, wrap in foil, and roast for 35–40 minutes until soft and golden.
- Prepare the potatoes: Toss cubed Idaho potatoes with 2 tablespoons olive oil, salt, pepper, thyme, and smoked paprika.
- Roast the potatoes: Spread potatoes on a baking sheet, roast for 35–40 minutes until golden and crispy, flipping halfway through.
- Make the garlic paste: Squeeze roasted garlic cloves into a bowl, mash into a paste.
- Combine and serve: Toss hot potatoes with garlic paste, garnish with parsley before serving.
