Description

Ingredients

Potatoes:

  • 2 pounds Idaho potatoes, cut into 1-inch cubes

Roasted Garlic:

  • 1 whole head of garlic
  • 3 tablespoons olive oil, divided

Seasonings:

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika

Garnish:

  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Roast the garlic: Slice the top off the garlic head, drizzle with 1 tablespoon of olive oil, wrap in foil, and roast for 35–40 minutes until soft and golden.
  3. Prepare the potatoes: Toss cubed Idaho potatoes with 2 tablespoons olive oil, salt, pepper, thyme, and smoked paprika.
  4. Roast the potatoes: Spread potatoes on a baking sheet, roast for 35–40 minutes until golden and crispy, flipping halfway through.
  5. Make the garlic paste: Squeeze roasted garlic cloves into a bowl, mash into a paste.
  6. Combine and serve: Toss hot potatoes with garlic paste, garnish with parsley before serving.

Notes

  • You can prep the garlic ahead of time and store it in the fridge for up to 3 days.
  • Enhance the dish with Parmesan cheese or a squeeze of lemon juice for added flavor.
