Description

These Roasted Garlic Cauliflower Tots are a delicious and healthy alternative to traditional tater tots. Made with roasted cauliflower, garlic, and a blend of cheeses, these tots are baked until golden and crispy. Perfect as an appetizer or side dish!


Ingredients

Cauliflower Tots:

  • 3 cups cauliflower florets
  • 4 cloves garlic (unpeeled)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs (or almond flour for gluten-free)
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 1 tablespoon chopped parsley (optional)


Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roast cauliflower and garlic: Spread cauliflower florets and garlic cloves on the baking sheet and roast for 20–25 minutes until tender and beginning to brown. Let cool slightly.
  3. Prepare the mixture: Squeeze roasted garlic from skins and add it to a food processor with cauliflower. Pulse until finely chopped. Transfer to a bowl and add cheddar, Parmesan, breadcrumbs, egg, salt, pepper, onion powder, and parsley. Mix well.
  4. Shape the tots: Scoop tablespoon-sized portions of the mixture and shape into small tots. Place on baking sheet.
  5. Bake: Bake for 20–25 minutes, flipping halfway through, until golden and crisp. Serve warm.

Notes

  • For extra crispiness, broil the tots for 1–2 minutes at the end.
  • Great with ketchup, ranch, or garlic aioli.
  • To make ahead, shape and refrigerate up to 24 hours before baking.
