Ingredients
Roasted Carrots
- 1 lb carrots, peeled and cut into sticks
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
Whipped Ricotta
- 1/2 cup ricotta cheese
- 2 tablespoons heavy cream or milk
- 1 tablespoon lemon juice
Garnish
- Fresh parsley, chopped (for garnish)
- Honey (optional, for drizzling)
Instructions
- Preheat Oven: Preheat the oven to 400°F (200°C) to prepare for roasting the carrots.
- Season Carrots: Toss the carrot sticks with olive oil, salt, pepper, ground cumin, ground coriander, and smoked paprika. Ensure all pieces are evenly coated for consistent flavor.
- Roast Carrots: Spread the seasoned carrots in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, flipping once halfway through until they are tender and slightly caramelized.
- Prepare Whipped Ricotta: While the carrots roast, combine ricotta cheese, heavy cream or milk, and lemon juice in a food processor. Blend until smooth and creamy, creating a luscious base for the carrots.
- Assemble Dish: Transfer the whipped ricotta onto a serving platter, spreading it evenly. Once the carrots are done roasting, arrange them on top of the ricotta layer.
- Garnish and Serve: Garnish with freshly chopped parsley and drizzle honey over the top if desired, enhancing the dish with a touch of sweetness. Serve immediately.
Notes
- For a dairy-free option, substitute ricotta with a vegan cheese alternative and use plant-based milk.
- Adjust spices according to taste—add a pinch of cayenne for heat if preferred.
- Honey drizzle is optional; for a vegan version, use maple syrup or agave nectar.
- Use fresh parsley for best flavor and presentation.
- Serve warm for the best texture and flavor combination.
