Ingredients

Main Ingredients:

  • 2 pounds carrots, peeled and cut into thick diagonals or halved lengthwise
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cumin (optional)
  • Fresh herbs (parsley, dill, or mint), for garnish

For the Garlic Yogurt Sauce:

  • 1 cup plain Greek yogurt
  • 12 cloves garlic, finely grated or minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat oven: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
