Ingredients

Sweet Potato Mixture:

  • 2 large sweet potatoes, peeled and cubed
  • 2 apples (such as Honeycrisp or Fuji), cored and chopped
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Optional Topping:

  • 1/4 cup chopped pecans
