Description

Indulgently simple, Ritz Cookies transform classic butter crackers into a sweet-and-salty treat. Creamy peanut butter is sandwiched between two Ritz crackers, dipped in rich chocolate, and finished with sprinkles for an irresistible no-bake snack that’s perfect for gifting, parties, or anytime you crave an easy dessert fix.

Ingredients

Units Scale

For the Sandwiches

  • 1 sleeve (about 30) Ritz crackers
  • 1 cup creamy peanut butter

For the Coating

  • 12 oz (340g) semi-sweet or milk chocolate chips (or candy melts)
  • 1 tablespoon coconut oil or vegetable shortening (optional, for smoother coating)

For Decorating (Optional)

  • Sprinkles, chopped nuts, or flaky sea salt

Instructions

  1. Prepare the Work Surface Set a baking sheet with parchment or wax paper to place the finished cookies after dipping.
  2. Make the Sandwiches Spread about 1 teaspoon of peanut butter onto one Ritz cracker, then top with a second cracker to make a sandwich. Press gently. Repeat until all crackers are used.
  3. Melt the Chocolate In a microwave-safe bowl, combine chocolate chips and coconut oil (if using). Microwave in 30-second bursts, stirring after each, until fully melted and smooth.
  4. Dip the Sandwiches Using a fork, dip each sandwich into the melted chocolate, coating completely. Let excess chocolate drip off, then place the cookie on the prepared baking sheet.
  5. Decorate Immediately add sprinkles, nuts, or sea salt before the chocolate sets. Work in batches if needed.
  6. Set and Serve Let the cookies sit at room temperature until chocolate firms up, or refrigerate the tray for 20–30 minutes to speed up setting. Enjoy or store in an airtight container.

Notes

  • Switch up the filling by using almond butter, Nutella, or marshmallow fluff for different flavors.
  • Dark chocolate or white chocolate can be used for dipping.
  • Store the finished cookies in the refrigerator if your house is warm, as the chocolate can soften at room temperature.
  • These cookies are a great make-ahead treat and stay fresh for up to a week.
