Instructions

  1. Prepare the Filling: In a medium bowl, combine shredded cabbage, grated carrot, sliced green onions, finely chopped tofu or mushrooms, cooked vermicelli noodles if using, soy sauce, sesame oil, grated fresh ginger, and minced garlic. Toss all ingredients well until evenly mixed and set aside.
  2. Soften the Rice Paper Wrappers: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10 seconds or until it softens but remains slightly firm. Carefully lay the softened wrapper flat onto a damp towel or clean surface to prepare for filling.
  3. Form the Dumplings: Spoon 2–3 tablespoons of the prepared filling near the bottom third of the softened wrapper. Fold in both sides tightly over the filling, then roll upward firmly like a burrito to enclose the filling completely. Repeat this process with the remaining wrappers and filling.
  4. Pan-Fry for Crispy Dumplings (Optional): Heat 1 tablespoon of oil in a non-stick pan over medium heat. Place the dumplings seam-side down in the pan and cook for 2 to 3 minutes on each side, or until the wrappers are golden brown and crispy. Remove and serve immediately with your favorite dipping sauce.
