Description

Ingredients

Crust:

  • 1 cup all-purpose flour
  • 1/2 cup cold unsalted butter (cut into cubes)
  • 1/4 cup granulated sugar

Filling:

  • 2 cups chopped fresh rhubarb
  • 8 ounces cream cheese (softened)
  • 1/2 cup granulated sugar (for filling)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest (optional)
  • 1/4 cup sour cream
  • powdered sugar for dusting (optional)


Instructions

  1. Preheat the oven: Preheat the oven to 350°F and lightly grease an 8×8-inch baking dish.
  2. Prepare the crust: In a medium bowl, combine flour, 1/4 cup sugar, and butter. Press into the bottom of the dish and bake until golden.
  3. Make the filling: Beat cream cheese and sugar, then add egg, vanilla, lemon zest, and sour cream. Fold in rhubarb.
