Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream butter and sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add wet ingredients: Beat in the eggs one at a time, then mix in vanilla extract, peppermint extract, and food coloring if using.
- Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
- Mix dough: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chocolate chunks and chopped mint chocolates.
- Bake: Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them 2 inches apart. Bake for 10 to 12 minutes, or until the edges are lightly golden but the centers are still soft.
- Cool: Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
