Description

These Refreshing Mint Chocolate Chunk Cookies are a delightful twist on classic chocolate chip cookies, with the cool flavor of mint and chunks of rich chocolate. Perfect for holiday baking or anytime you want a fresh, minty treat.


Ingredients

Cookie Dough:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups semi-sweet chocolate chunks
  • 1/2 cup chopped Andes mints or mint chocolate pieces
  • Optional: green food coloring for a festive look


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add wet ingredients: Beat in the eggs one at a time, then mix in vanilla extract, peppermint extract, and food coloring if using.
  4. Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  5. Mix dough: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chocolate chunks and chopped mint chocolates.
  6. Bake: Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them 2 inches apart. Bake for 10 to 12 minutes, or until the edges are lightly golden but the centers are still soft.
  7. Cool: Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
