These Red, White, and Blue Cheesecake Strawberries are a delightful and patriotic twist on traditional cheesecake. Fresh strawberries are filled with a creamy cheesecake mixture and decorated with festive colors for a perfect summer treat.

- 1 pound fresh strawberries
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup crushed graham crackers (optional)
- 1/4 cup blue sanding sugar or sprinkles

- Rinse and dry the strawberries. Slice off the stems to create a flat base, then cut a deep ‘X’ into the pointed end of each strawberry without cutting all the way through. Gently spread the sections to make room for filling.
- In a mixing bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and fluffy. Transfer the mixture to a piping bag or zip-top bag with a corner snipped off.
- Pipe the cheesecake filling into each strawberry. If using, dip the bottoms in crushed graham crackers for a ‘crust’ effect. Then dip or sprinkle the tops with blue sanding sugar.
- Chill for 20–30 minutes before serving for the best texture. Serve cold on a platter for a festive treat.
