Description

Red Velvet Whoopie Pies are delightful sandwich cookies featuring soft, cake-like red velvet rounds filled with a creamy, tangy cream cheese frosting. Perfectly balanced with rich cocoa and a hint of vanilla, these treats combine the best of cake and cookies in every bite.

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt

Wet Ingredients

  • 1 cup granulated sugar
  • 3/4 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tbsp red food coloring

Filling

  • 8 oz cream cheese, softened
  • 2 cups powdered sugar

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper to prevent sticking and ensure easy cleanup.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt until well combined. This ensures even distribution of the leavening agents and cocoa.
  3. Combine Wet Ingredients: In another bowl, mix the granulated sugar with the vegetable oil until smooth. Add the eggs one at a time, beating well after each addition. Then stir in the buttermilk and red food coloring until the mixture is uniform in color.
  4. Combine Batter: Gradually add the dry ingredients to the wet ingredients, mixing gently until just incorporated. Avoid overmixing to keep the whoopie pies tender and moist.
  5. Shape and Bake: Drop rounded tablespoons of the batter onto the prepared baking sheets, spacing them about two inches apart to allow for spreading. Bake in the preheated oven for 10-12 minutes, or until the tops spring back when lightly touched.
  6. Cool: Remove the baked whoopie pies from the oven and allow them to cool completely on the baking sheets. This is important before filling to prevent melting of the filling.
  7. Prepare Filling: In a medium bowl, beat the softened cream cheese with the powdered sugar until smooth and creamy. Adjust sweetness or thickness if needed.
  8. Assemble: Once the whoopie pies are cooled, spread or pipe a generous amount of the cream cheese filling onto the flat side of one round and sandwich with another, gently pressing together.

Notes

  • Use softened cream cheese for a smooth filling.
  • Ensure whoopie pies are fully cooled before filling to prevent melting.
  • Red food coloring intensity can be adjusted to preference.
  • For a stronger red velvet flavor, add 1 tsp vanilla extract to wet ingredients.
  • Store assembled whoopie pies in an airtight container in the refrigerator, best consumed within 3 days.
