Ingredients

Eggs:

8 large eggs;

Milk:

¼ cup;

Olive Oil:

1 tablespoon;

Red Bell Pepper:

1, diced;

Spinach:

2 cups, chopped;

Green Onions:

2, sliced;

Garlic Powder:

½ teaspoon;

Crushed Red Pepper Flakes (optional):

Goat Cheese:

4 ounces, crumbled

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F.
  2. Prepare Egg Mixture: In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and red pepper flakes if using.
  3. Cook Vegetables: Heat olive oil in an oven-safe skillet over medium heat. Add the diced red bell pepper and cook until softened. Stir in the spinach and green onions and cook until wilted.
  4. Add Egg Mixture: Pour the egg mixture into the skillet, stir gently to distribute the vegetables evenly, and sprinkle the goat cheese over the top.
