  • 12 oz. smoked sausage, cubed

  • 2 teaspoons smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 quart chicken broth
  • 2 (15 oz) cans red beans, drained
  • 1 (15 oz) can crushed tomatoes
  • 1 1/2 cups white rice
  • 1 cup green onion, sliced
  • 1 bottle hot sauce (Crystal preferred)


Instructions

  1. Cook the Sausage: In a heavy-bottomed pot over medium heat, add olive oil and cubed smoked sausage. Cook the sausage for 8-10 minutes until it is deeply caramelized, which will develop rich flavor and color.
  2. Sauté the Vegetables: Add the chopped celery, green bell pepper, diced onion, and minced garlic to the pot with the sausage. Cook the mixture for about 6-8 minutes until the vegetables soften and become fragrant.
  3. Add Remaining Ingredients and Simmer: Stir in the red beans, crushed tomatoes, white rice, cajun seasoning, smoked paprika, dried oregano, and chicken broth. Bring the mixture to a boil, then reduce the heat to a low simmer. Season with salt and pepper to taste. Cover the pot and let it cook for 13-15 minutes until the rice is tender and has absorbed the flavors.
  4. Let it Rest: Remove the pot from heat and keep it covered. Allow the jambalaya to rest for 5 minutes. This resting time helps the flavors meld and the rice to finish cooking evenly.
  5. Garnish and Serve: Stir in sliced green onions and add hot sauce to taste for a spicy finish. Serve the jambalaya hot in bowls, enjoying its hearty, smoky, and spicy goodness.
