Ingredients
Cheese Ravioli:
- 20 ounces refrigerated cheese ravioli
Sauce:
- 1 tablespoon olive oil
- 3 garlic cloves (minced)
- 1 pint cherry tomatoes (halved)
- 1 bunch asparagus (trimmed and cut into 1-inch pieces)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
- 2 tablespoons butter
- ¼ cup grated Parmesan cheese
- 2 tablespoons chopped fresh basil
- 1 tablespoon chopped fresh parsley
- zest of 1 lemon
Instructions
- Cook the Ravioli: Bring a large pot of salted water to a boil. Cook the ravioli according to package directions. Drain and set aside.
- Prepare the Sauce: Heat olive oil in a skillet over medium heat. Sauté garlic until fragrant. Add cherry tomatoes and cook until softened. Stir in asparagus, salt, pepper, and red pepper flakes. Cook until asparagus is tender.
- Combine: Add cooked ravioli and butter to the skillet. Toss until coated. Remove from heat.
