Ingredients
Ravioli:
- 1 (20 oz) package cheese or spinach ravioli
Vegetable Mix:
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 1 bunch asparagus (trimmed and cut into 2-inch pieces)
- 1 1/2 cups cherry tomatoes (halved)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh basil
- 1 tablespoon chopped fresh parsley
Additional:
- 1/4 cup grated Parmesan cheese
Instructions
- Cook the Ravioli: Prepare the ravioli according to package instructions. Drain and set aside, saving 1/4 cup of pasta water.
- Sauté Vegetables: Heat olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant. Add asparagus and cook until tender. Stir in cherry tomatoes, salt, pepper, and red pepper flakes; cook until tomatoes soften.
- Combine Ingredients: Add the cooked ravioli to the skillet. Toss gently to mix. Stir in reserved pasta water, lemon juice, and fresh herbs. Heat through.
