Description

A delightful and flavorful dish combining cheese or spinach ravioli with the freshness of tomatoes, asparagus, garlic, and herbs, all brought together in a light olive oil and lemon sauce. This recipe is perfect for a quick and satisfying vegetarian meal.


Ingredients

Ravioli:

  • 1 (20 oz) package cheese or spinach ravioli

Vegetable Mix:

  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 bunch asparagus (trimmed and cut into 2-inch pieces)
  • 1 1/2 cups cherry tomatoes (halved)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh parsley

Additional:

  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the Ravioli: Prepare the ravioli according to package instructions. Drain and set aside, saving 1/4 cup of pasta water.
  2. Sauté Vegetables: Heat olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant. Add asparagus and cook until tender. Stir in cherry tomatoes, salt, pepper, and red pepper flakes; cook until tomatoes soften.
  3. Combine Ingredients: Add the cooked ravioli to the skillet. Toss gently to mix. Stir in reserved pasta water, lemon juice, and fresh herbs. Heat through.
  4. Serve: Plate and top with grated Parmesan cheese. Enjoy!
