Description

Indulge in the light and fruity delight of this exquisite Raspberry Mousse. Perfect for a refreshing summer treat or a special dessert any time of the year.


Ingredients

Main Raspberry Mixture:

2 cups fresh raspberries (plus extra for garnish), 1/2 cup granulated sugar, 1 tablespoon lemon juice.

Gelatin Mixture:

1 tablespoon water, 1 tablespoon unflavored gelatin.

Whipped Cream:

1 1/2 cups heavy cream (cold), 1/2 teaspoon vanilla extract


Instructions

  1. Raspberry Puree: In a small saucepan over medium heat, combine raspberries, sugar, and lemon juice. Cook until raspberries break down. Strain to remove seeds.
  2. Gelatin Preparation: Mix water and gelatin, add to warm raspberry puree. Cool to room temperature.
  3. Whipped Cream: Whip cold cream with vanilla until stiff peaks form. Fold in raspberry mixture.
  4. Chilling: Spoon mousse into cups, chill for at least 2 hours. Garnish with raspberries before serving.
