Description

This light and airy Raspberry Mousse combines fresh raspberries with a creamy whipped topping, set with gelatin to create a perfectly smooth and fruity dessert. It’s naturally vibrant in color and flavor, easy to prepare with simple ingredients, and ideal for a refreshing treat or elegant presentation.

Ingredients

Main Ingredients

  • 2 cups fresh raspberries (plus extra for garnish)
  • 1/2 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon unflavored gelatin
  • 3 tablespoons cold water
  • 1 1/2 cups heavy whipping cream
  • 1 teaspoon vanilla extract
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Prepare Raspberry Puree: Puree the fresh raspberries in a blender or food processor until smooth, then strain the mixture through a fine-mesh sieve to remove all seeds, resulting in a silky raspberry puree.
  2. Heat Raspberry Mixture: In a small saucepan over medium heat, combine the strained raspberry puree, granulated sugar, and lemon juice. Stir gently until the sugar dissolves completely and the mixture is warmed through but not boiling.
  3. Bloom Gelatin: Sprinkle the unflavored gelatin evenly over the 3 tablespoons of cold water in a small bowl. Let it sit undisturbed for about 5 minutes until the gelatin absorbs the water and softens (blooms).
  4. Dissolve Gelatin: Stir the bloomed gelatin into the warm raspberry mixture until it dissolves fully. Then, allow the mixture to cool to room temperature to prevent curdling or melting the whipped cream later.
  5. Whip Cream: In a large mixing bowl, whip the heavy cream with vanilla extract using an electric mixer or whisk until soft peaks form, meaning the cream holds shape but is still soft and smooth.
  6. Combine Mixtures: Gently fold the cooled raspberry mixture into the whipped cream. Use a spatula to carefully combine without deflating the whipped cream to maintain the mousse’s light texture.
  7. Chill Mousse: Spoon the mousse evenly into individual serving glasses or bowls. Refrigerate for at least 2 to 3 hours until the mousse is set and chilled.
  8. Garnish and Serve: Just before serving, garnish each portion with fresh raspberries and optional mint leaves for an attractive and fresh presentation.

Notes

  • Ensure the raspberry mixture is cooled to room temperature before folding into whipped cream to prevent melting.
  • Use fresh, ripe raspberries for the best flavor and natural sweetness.
  • Gelatin can be substituted with a vegetarian setting agent like agar-agar if desired, but adjustments are needed.
  • For a smoother mousse, be patient with straining to remove all raspberry seeds.
  • Refrigerate the mousse in airtight containers if not serving immediately to keep it fresh.
