Ingredients
For the Crust:
- 1 1/2 cups graham cracker crumbs
 - 1/4 cup granulated sugar
 - 1/2 cup unsalted butter, melted
 
For the Cheesecake Filling:
- 2 (8-ounce) packages cream cheese, softened
 - 2/3 cup granulated sugar
 - 2 large eggs
 - 1 teaspoon vanilla extract
 - 2 tablespoons all-purpose flour
 - 1/4 cup sour cream
 - 1 cup fresh raspberries
 - 2 tablespoons raspberry jam (optional for swirl)
 
Instructions
- Preheat the oven: Preheat the oven to 325°F (160°C). Line a 9×9-inch baking pan with parchment paper, leaving an overhang for easy removal.
 - Prepare the Crust: Mix graham cracker crumbs, 1/4 cup sugar, and melted butter; press into the pan to form a crust.
 - Make the Cheesecake Filling: Beat cream cheese, sugar until creamy. Add eggs, vanilla, flour, and sour cream; fold in raspberries.
 - Assemble and Bake: Pour filling over crust, swirl in jam if desired. Bake for 35–40 minutes until set.
 - Cool and Chill: Cool at room temperature, then refrigerate for at least 3 hours. Cut into bars and serve.
 
Notes
- You can use frozen raspberries, but be sure to thaw and drain them well before adding to the cheesecake batter.
 - For a zesty twist, consider adding a hint of lemon zest to the cheesecake mixture.
