Description

This easy and flavorful Ramen Noodle Stir Fry with Chicken is a quick meal packed with delicious veggies and savory seasonings. The tender chicken and noodles come together perfectly for a satisfying dish that’s perfect for lunch or dinner.


Ingredients

  • 2 boneless, skinless chicken breasts, sliced into thin strips

  • 2 packs of instant ramen noodles (discard the seasoning packet)

  • 1 tablespoon vegetable oil

  • 1/2 cup carrots, julienned

  • 1/2 cup bell pepper, thinly sliced

  • 1/4 cup green onions, chopped

  • 1/4 cup soy sauce

  • 1 tablespoon sesame oil

  • 2 cloves garlic, minced

  • 1 teaspoon ginger, minced

  • 1 tablespoon rice vinegar

  • 1 tablespoon honey

  • 1 tablespoon oyster sauce (optional)

  • 1 teaspoon chili flakes (optional)

 

  • 1/4 teaspoon black pepper


Instructions

  • Cook the ramen noodles according to package instructions. Drain and set aside.

  • Heat the vegetable oil in a large pan or wok over medium heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.

  • In the same pan, add the garlic and ginger, cooking for 1-2 minutes until fragrant.

  • Add the carrots, bell pepper, and green onions to the pan, cooking for about 3-4 minutes until they begin to soften.

  • In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, oyster sauce (if using), chili flakes (if using), and black pepper.

  • Add the cooked noodles back into the pan with the vegetables. Pour the sauce over the noodles and toss everything together until well coated and heated through.

  • Add the chicken back to the pan, stirring to combine. Cook for another 2 minutes, allowing everything to heat evenly.

 

  • Serve immediately and enjoy!


Notes

  • Feel free to customize the veggies to your preference, adding things like snap peas, mushrooms, or broccoli.

  • For extra crunch, you can top with sesame seeds or crushed peanuts.

 

  • Adjust the heat by adding more or less chili flakes.
