Ingredients

Dry Ingredients

  • 1 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Prepare Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt until evenly combined. Set aside for later use.
  2. Cream Butter and Sugar: In a large bowl, using a mixer, cream the softened unsalted butter and granulated sugar together until the mixture is light and fluffy, approximately 2 to 3 minutes.
  3. Add Egg and Vanilla: Add the large egg and vanilla extract to the creamed butter and sugar mixture and mix thoroughly until fully incorporated and smooth.
  4. Combine Dry and Wet Ingredients: Gradually add the dry flour mixture to the wet ingredients, mixing until a smooth dough forms without overworking.
  5. Divide and Color Dough: Divide the dough into 6 equal portions. Tint each portion with a different gel food coloring color by gently kneading each portion until the color is evenly distributed throughout.
  6. Shape Dough into Ropes: Roll each colored dough portion into ropes about 1/2 inch thick and 8 to 10 inches long.
  7. Assemble Rainbow Log: Place the colored ropes side by side in a row, gently press them together to adhere, then carefully roll the combined ropes into a log shape. Wrap the log tightly in plastic wrap.
  8. Chill Dough: Refrigerate the wrapped dough log for at least 1 hour to firm it up for slicing and baking.
