Description

Colorful and creamy, these Rainbow Cheesecake Swirl Bars are a festive twist on classic cheesecake bars. Perfect for parties or special occasions, they combine vibrant colors with rich cheesecake flavor.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • Gel food coloring (red, orange, yellow, green, blue, purple)

Instructions

  1. Preheat oven to 325°F (163°C). Line a 9×13 inch baking pan with parchment paper and set aside.
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press mixture evenly into the bottom of the prepared pan to form the crust.
  3. In a large bowl, beat the cream cheese and sugar until smooth and creamy.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract and sour cream until combined.
  5. Divide the batter evenly into six bowls. Tint each with a different color of gel food coloring.
  6. Spoon colored batters in dollops over the crust, alternating colors. Use a skewer or knife to gently swirl the colors together.
  7. Bake for 35–40 minutes or until the center is set and the edges are lightly golden.
  8. Cool to room temperature, then refrigerate for at least 3 hours or until fully chilled.
  9. Cut into bars and serve.

Notes

  • Use gel food coloring for more vibrant colors without thinning the batter.
  • For clean slices, wipe the knife clean between cuts.
  • Store bars in an airtight container in the fridge for up to 5 days.
