Description

Ingredients

For the Soup:

  • 1 tablespoon olive oil
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon red curry paste or chili garlic sauce
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 4 cups low-sodium chicken or seafood broth
  • 1 can (14 oz) diced tomatoes (with juices)
  • 1 tablespoon fish sauce or soy sauce
  • 1 teaspoon brown sugar
  • 1/2 pound raw shrimp (peeled and deveined)
  • 1 cup canned coconut milk
  • 1 tablespoon lime juice

For Garnish:

  • 2 green onions (sliced)
  • Fresh cilantro or basil for garnish

Instructions

  1. Heat the olive oil: In a medium pot over medium heat, sauté the onion until soft.
  2. Add aromatics: Stir in garlic, ginger, red curry paste, and red pepper flakes; cook until fragrant.
  3. Simmer: Add broth, tomatoes, fish sauce, and brown sugar. Simmer for 5–7 minutes.
  4. Cook shrimp: Add shrimp and cook until pink and opaque.
  5. Finish: Stir in coconut milk and lime juice; simmer briefly. Adjust seasoning.
