- 200g udon noodles
- 2 tbsp chili oil
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1 garlic clove, minced
- 1 tsp ginger, minced
- 1 green onion, sliced
- 1 tbsp sesame seeds (optional)
- Red pepper flakes (optional for extra spice)
Instructions
- Cook the udon noodles according to package instructions. Drain and set aside.
- In a small pan, heat the chili oil over medium heat. Add the garlic and ginger, cooking until fragrant (about 1-2 minutes).
- Lower the heat, and stir in the soy sauce, sesame oil, rice vinegar, and sugar. Stir until the sugar dissolves and everything is well combined.
- Place the cooked udon noodles in a large bowl and pour the chili oil mixture over the noodles. Toss to coat the noodles evenly.
- Garnish with sliced green onions, sesame seeds, and red pepper flakes (optional).

Notes
- If you prefer a milder version, reduce the amount of chili oil and red pepper flakes.
