Ingredients
Truffle Mixture
- 1 tablespoon unsalted butter
- 4 oz cream cheese, softened
- 1/2 cup pumpkin puree
- 1 (14 oz) can sweetened condensed milk
- 2 teaspoons pumpkin pie spice
- 1/2 cup graham cracker crumbs
- 1/2 cup white chocolate chips or melting wafers
- Orange food coloring (optional)
Coating and Decoration
- Granulated sugar (as needed, for coating)
- Chocolate chips (for topping, as stems)
Instructions
- Prepare the Pumpkin Mixture: In a medium saucepan, combine the butter, softened cream cheese, pumpkin puree, sweetened condensed milk, and pumpkin pie spice.
- Cook and Thicken: Stir the mixture over medium heat until it is well combined and thickened, about 5 to 7 minutes.
- Add White Chocolate and Graham Cracker Crumbs: Stir in the white chocolate chips and graham cracker crumbs until the chocolate has melted completely and the mixture is smooth.
- Add Food Coloring and Continue Cooking: Add orange food coloring as desired, then continue stirring until the mixture thickens further and pulls away from the sides of the pan.
- Chill the Mixture: Transfer the mixture to a greased baking sheet and spread it evenly. Refrigerate until firm, at least 2 hours or overnight.
- Shape the Truffles: Once firm, lightly coat your hands with butter to prevent sticking and roll the chilled mixture into small balls.
- Coat and Decorate: Roll each truffle ball in granulated sugar to coat. Use a toothpick to press ridges into each truffle, creating a pumpkin-like appearance.
- Add Pumpkin Stems: Place a chocolate chip on top of each truffle to serve as the pumpkin stem.
- Final Chill and Serve: Chill the decorated truffles again until ready to serve. Keep refrigerated for best texture.
