Description

These Pumpkin Truffles are a delightful fall treat that combines creamy pumpkin, warm spices, and sweet white chocolate into bite-sized, festive sweets. Perfect for autumn gatherings, these truffles are easy to make and beautifully decorated to resemble miniature pumpkins.

Ingredients

Truffle Mixture

  • 1 tablespoon unsalted butter
  • 4 oz cream cheese, softened
  • 1/2 cup pumpkin puree
  • 1 (14 oz) can sweetened condensed milk
  • 2 teaspoons pumpkin pie spice
  • 1/2 cup graham cracker crumbs
  • 1/2 cup white chocolate chips or melting wafers
  • Orange food coloring (optional)

Coating and Decoration

  • Granulated sugar (as needed, for coating)
  • Chocolate chips (for topping, as stems)

Instructions

  1. Prepare the Pumpkin Mixture: In a medium saucepan, combine the butter, softened cream cheese, pumpkin puree, sweetened condensed milk, and pumpkin pie spice.
  2. Cook and Thicken: Stir the mixture over medium heat until it is well combined and thickened, about 5 to 7 minutes.
  3. Add White Chocolate and Graham Cracker Crumbs: Stir in the white chocolate chips and graham cracker crumbs until the chocolate has melted completely and the mixture is smooth.
  4. Add Food Coloring and Continue Cooking: Add orange food coloring as desired, then continue stirring until the mixture thickens further and pulls away from the sides of the pan.
  5. Chill the Mixture: Transfer the mixture to a greased baking sheet and spread it evenly. Refrigerate until firm, at least 2 hours or overnight.
  6. Shape the Truffles: Once firm, lightly coat your hands with butter to prevent sticking and roll the chilled mixture into small balls.
  7. Coat and Decorate: Roll each truffle ball in granulated sugar to coat. Use a toothpick to press ridges into each truffle, creating a pumpkin-like appearance.
  8. Add Pumpkin Stems: Place a chocolate chip on top of each truffle to serve as the pumpkin stem.
  9. Final Chill and Serve: Chill the decorated truffles again until ready to serve. Keep refrigerated for best texture.

Notes

  • Use cold cream cheese to ensure it blends smoothly when heated.
  • The pumpkin pie spice can be adjusted to taste or substituted with a combination of cinnamon, nutmeg, and cloves.
  • If the mixture is too soft to roll, chill it longer to firm up properly.
  • Orange food coloring is optional but provides a vibrant pumpkin color.
  • Store truffles in an airtight container in the refrigerator for up to one week.
  • For a dairy-free version, substitute cream cheese and butter with vegan alternatives and use dairy-free white chocolate chips.
