Description

These Pumpkin Spice Protein Balls are a delicious and nutritious snack packed with fall flavors and a protein boost. Easy to make and perfect for on-the-go energy!


Ingredients

Wet Ingredients:

  • ½ cup canned pumpkin purée
  • ½ cup natural almond butter (or peanut butter)
  • ⅓ cup maple syrup or honey
  • 1 tsp vanilla extract

Dry Ingredients:

  • 1 ½ tsp pumpkin pie spice
  • 1 ½ cups old-fashioned rolled oats
  • ½ cup vanilla or unflavored protein powder
  • 2 tbsp ground flaxseed or chia seeds
  • 2 tbsp mini chocolate chips or chopped nuts (optional)
  • pinch of salt


Instructions

  1. Mix Wet Ingredients: In a large bowl, combine pumpkin purée, almond butter, maple syrup, vanilla extract, and pumpkin pie spice until smooth.
  2. Add Dry Ingredients: Stir in oats, protein powder, flaxseed or chia seeds, and salt until well combined.
  3. Optional: Fold in mini chocolate chips or nuts.
  4. Chill: Refrigerate mixture for 20–30 minutes to firm up.
  5. Roll: Scoop and roll into 1-inch balls.
  6. Store: Keep in an airtight container in the fridge for up to 1 week or freeze for longer storage.

Notes

  • Use a plant-based protein powder to keep these vegan.
  • If the mixture is too sticky, add more oats or protein powder.
  • Great as a pre-workout snack or healthy treat.
