Description

No-bake, nutrient-rich bites that combine warm autumn spices, pumpkin puree, and oats for a cozy, portable snack perfect for any time of day.


Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup almond butter
  • 1/3 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1 tbsp chia seeds
  • 1 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1/4 cup mini chocolate chips (optional)


Instructions

  1. In a large bowl, combine pumpkin puree, almond butter, maple syrup, and vanilla extract until smooth.
  2. Add rolled oats, chia seeds, pumpkin pie spice, and sea salt. Mix until a thick, even dough forms.
  3. If using, fold in mini chocolate chips.
  4. Cover and refrigerate the dough for at least 30 minutes to firm up.
  5. Roll heaping tablespoons of the chilled mixture into balls. You should get about 12 bites.
  6. Enjoy immediately or store in an airtight container in the fridge.
