Ingredients
- 1 1/2 cups rolled oats
- 1/2 cup almond butter
- 1/3 cup pumpkin puree
- 1/4 cup maple syrup
- 1 tbsp chia seeds
- 1 tsp pumpkin pie spice
- 1/2 tsp vanilla extract
- 1/4 tsp sea salt
- 1/4 cup mini chocolate chips (optional)
Instructions
- In a large bowl, combine pumpkin puree, almond butter, maple syrup, and vanilla extract until smooth.
- Add rolled oats, chia seeds, pumpkin pie spice, and sea salt. Mix until a thick, even dough forms.
- If using, fold in mini chocolate chips.
- Cover and refrigerate the dough for at least 30 minutes to firm up.
- Roll heaping tablespoons of the chilled mixture into balls. You should get about 12 bites.
- Enjoy immediately or store in an airtight container in the fridge.
