Description

Indulge in the irresistible flavors of fall with this Pumpkin Earthquake Cake. A rich pumpkin spice cake with a cream cheese swirl, crunchy pecans, and sweet coconut, creating a dessert that’s a must-have for autumn.

Ingredients

Main Cake:

  • 1 box spice cake mix
  • 1 cup canned pumpkin puree
  • ½ cup vegetable oil
  • 3 large eggs
  • ⅓ cup milk
  • 1 teaspoon pumpkin pie spice
  • ½ cup chopped pecans
  • 1 cup sweetened shredded coconut

Cream Cheese Swirl:

  • 8 oz cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Mix cake batter: In a large bowl, combine the spice cake mix, pumpkin puree, oil, eggs, milk, and pumpkin pie spice. Spread pecans and coconut in the pan, then pour batter over.
  3. Make cream cheese swirl: Beat cream cheese and butter, add powdered sugar and vanilla. Drop spoonfuls over batter and swirl with a knife.
  4. Bake: Bake for 40–45 minutes until set. Cool before slicing and serving.

Notes

  • The crackled appearance on top is normal and adds charm to the cake.
  • For extra flavor, consider adding white chocolate chips or cinnamon sugar on top before baking.
