Ingredients
Dough Ingredients
- 1 1/2 cups whole wheat flour
- 1/2 cup vanilla protein powder
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1/4 cup applesauce
- 1/4 cup neutral-flavored oil
- 1 teaspoon vanilla extract
Filling
- 1/2 cup strawberry jam
Glaze
- 1 cup confectioners sugar (sugar-free or regular)
- 2 tablespoons milk or water (as needed)
- 1/2 teaspoon vanilla extract
- Optional: 1 cup vanilla protein powder (for adding to glaze)
Instructions
- Preheat the Oven: Preheat your oven to 170°C (325°F). Line a baking tray with parchment paper and set aside for later use.
- Prepare the Dry Ingredients: In a medium mixing bowl, combine whole wheat flour, vanilla protein powder, sugar, and baking powder. Whisk them together to ensure even distribution.
- Mix the Wet Ingredients: In a separate smaller bowl, blend the applesauce, neutral-flavored oil, and vanilla extract until the mixture is smooth and well combined.
- Form the Dough: Pour the wet ingredients into the dry ingredients bowl. Stir the mixture until it forms a dough. If the dough is too dry or crumbly, add 1 to 2 teaspoons of ice-cold water to moisten. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 15 minutes to chill and firm up.
- Roll and Cut the Pastry: Remove the dough from the fridge and divide it into two equal parts. Roll out one portion between two sheets of parchment paper until about 1/8 inch thick. Use a pizza cutter to cut the dough into 8 equal-sized rectangles. Repeat with the second dough portion.
- Fill the Pastry: Place the rectangles on the lined baking tray. Add a generous spoonful of strawberry jam into the center of each rectangle, keeping the edges clear to allow for sealing.
- Assemble and Seal: Top each jam-filled rectangle with a second rectangle of dough. Press down gently to adhere, then use a fork to crimp and seal the edges thoroughly to prevent filling leakage during baking.
- Bake the Pop Tarts: Bake in the preheated oven for 10 to 15 minutes, or until the pop tarts turn a light golden brown. Remove from oven and transfer them onto a wire rack to cool completely.
- Prepare the Glaze: In a mixing bowl, whisk together confectioners sugar, milk or water, and vanilla extract until smooth. If desired, incorporate vanilla protein powder for added flavor and protein. Adjust the consistency by adding more milk or water to reach a spreadable glaze.
- Glaze and Decorate: Spread the glaze evenly over the cooled pop tarts, avoiding the edges to create a neat look. You may add sprinkles or other decorations as desired. Allow the glaze to set at room temperature before serving.

- You can substitute strawberry jam with any other fruit jam or nut butter.
- Store baked and glazed pop tarts in an airtight container at room temperature for up to 3 days.
