Ingredients

For the Brownies:

  • 1/2 cup creamy peanut butter
  • 1/4 cup coconut oil or unsalted butter, melted
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup chocolate protein powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 cup almond flour or oat flour
  • 1/4 cup mini chocolate chips (optional)


Instructions

  1. Preheat the Oven: Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.
  2. Mix Wet Ingredients: In a large bowl, whisk together the peanut butter, melted coconut oil, and honey until smooth. Add the eggs and vanilla and whisk until fully incorporated.
  3. Add Dry Ingredients: Stir in the cocoa powder, protein powder, salt, and baking soda. Add the almond flour and stir until just combined. Fold in the mini chocolate chips if using.
  4. Bake: Pour the batter into the prepared pan and spread evenly. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out mostly clean.
  5. Cool and Serve: Allow to cool completely in the pan before slicing into squares.
