Description

These Potsticker Noodle Bowls are a delicious and easy stir-fry dinner that combines the flavors of potstickers with noodles and veggies. A satisfying Asian-inspired meal that is perfect for a quick weeknight dinner.


Ingredients

For the Noodle Bowls:

  • 1 tablespoon sesame oil
  • 1 pound ground pork or chicken
  • 1 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic (minced)
  • 1 bag (14 ounces) coleslaw mix or shredded cabbage
  • 2 green onions (sliced)
  • 6 ounces ramen noodles (discard seasoning packets)

For the Sauce:

  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon sriracha (optional)
  • 1 teaspoon sugar

For Garnish:

  • 1 tablespoon sesame seeds (optional)
  • Chopped cilantro or green onion for garnish

Instructions

  1. Cook the Noodles: Prepare ramen noodles according to package directions, drain, and set aside.
  2. Sauté Meat: Heat sesame oil in a skillet, cook ground pork/chicken until browned. Add soy sauce, hoisin sauce, rice vinegar, ginger, and garlic; cook to blend flavors.
  3. Add Veggies: Stir in coleslaw mix and green onions, sauté until slightly softened.
  4. Make Sauce: Mix remaining soy sauce, sriracha, and sugar in a bowl.
  5. Combine: Add cooked noodles to skillet, pour sauce over the top, toss until well combined and heated through.
  6. Garnish: Sprinkle with sesame seeds and fresh herbs before serving.

Notes

  • You can substitute ground turkey or beef and use rice noodles or soba for a different texture.
  • Add shredded carrots or snap peas for extra crunch.
