These Potsticker Noodle Bowls are a delicious and easy stir-fry dinner that combines the flavors of potstickers with noodles and veggies. A satisfying Asian-inspired meal that is perfect for a quick weeknight dinner.
Ingredients
For the Noodle Bowls:
- 1 tablespoon sesame oil
- 1 pound ground pork or chicken
- 1 tablespoon soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- 2 cloves garlic (minced)
- 1 bag (14 ounces) coleslaw mix or shredded cabbage
- 2 green onions (sliced)
- 6 ounces ramen noodles (discard seasoning packets)
For the Sauce:
- 1/4 cup low-sodium soy sauce
- 1 tablespoon sriracha (optional)
- 1 teaspoon sugar
For Garnish:
- 1 tablespoon sesame seeds (optional)
- Chopped cilantro or green onion for garnish
Instructions
- Cook the Noodles: Prepare ramen noodles according to package directions, drain, and set aside.
- Sauté Meat: Heat sesame oil in a skillet, cook ground pork/chicken until browned. Add soy sauce, hoisin sauce, rice vinegar, ginger, and garlic; cook to blend flavors.
- Add Veggies: Stir in coleslaw mix and green onions, sauté until slightly softened.
- Make Sauce: Mix remaining soy sauce, sriracha, and sugar in a bowl.
- Combine: Add cooked noodles to skillet, pour sauce over the top, toss until well combined and heated through.
- Garnish: Sprinkle with sesame seeds and fresh herbs before serving.
Notes
- You can substitute ground turkey or beef and use rice noodles or soba for a different texture.
- Add shredded carrots or snap peas for extra crunch.
