Dough

  • 2 cups mashed potatoes (plain, unsalted)

  • 1/4 cup vegetable oil
  • 1 teaspoon salt

Filling

  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cups finely shredded cabbage
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup shredded mozzarella or cheddar cheese


Instructions

  1. Activate yeast: In a small bowl, dissolve the yeast and sugar in warm milk. Let it sit for 5–10 minutes until the mixture becomes foamy, indicating the yeast is active.
  2. Make dough: In a large bowl, combine the mashed potatoes, flour, salt, vegetable oil, and beaten egg. Add the yeast mixture and knead everything together until a soft dough forms. Cover the bowl and let the dough rise in a warm place for about 1 hour, or until it doubles in size.
  3. Prepare filling: While the dough rises, melt the butter in a pan over medium heat. Add the chopped onion and sauté until translucent. Add the shredded cabbage, salt, and pepper, cooking for 10–12 minutes until the cabbage softens. Remove from heat and let cool slightly, then stir in the shredded cheese.
