Description

This Pork Chops and Rice Casserole is a comforting and easy one-dish meal featuring tender pork chops baked atop a creamy, flavorful rice mixture. The casserole combines condensed cream of mushroom soup, beef broth, and seasonings for a savory base, topped with pork chops seasoned with Lipton Onion Soup Mix. Baked covered to lock in moisture, the dish delivers juicy pork chops paired perfectly with fluffy, seasoned rice, making it an ideal family dinner.

Ingredients

Casserole Base

  • 1 can (10.5 ounces) condensed cream of mushroom soup, undiluted
  • 2 cups beef broth
  • 1 cup uncooked long-grain white rice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried chives
  • 1/4 teaspoon onion powder

Pork Chops

  • 4 thick-cut pork chops (bone-in or boneless, per preference)
  • 1 packet (1 ounce) Lipton Onion Soup & Dip Mix or other seasoning blend

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly spray a 9 x 13-inch baking dish with cooking spray to prevent sticking.
  2. Prepare the Rice Mixture: In a large bowl, whisk together condensed cream of mushroom soup, beef broth, uncooked rice, garlic powder, dried chives, and onion powder until smooth. Pour this mixture evenly into the prepared baking dish.
  3. Arrange the Pork Chops: Pat the pork chops dry with paper towels for even cooking. Place them on top of the rice mixture spaced evenly in the baking dish.
  4. Season the Pork Chops: Sprinkle the Lipton Onion Soup & Dip Mix evenly over the pork chops. For a milder flavor or reduced salt, use half the packet.
  5. First Bake: Cover the dish tightly with aluminum foil to retain moisture. Bake in the preheated oven for about 30 minutes. Check the pork chops’ internal temperature; it should reach 145°F (63°C). If done, remove pork chops from casserole, cover with foil, and let rest.
  6. Finish Cooking the Rice: Stir the rice mixture to combine the flavors. Re-cover the baking dish and bake for an additional 25-30 minutes, or until the rice is tender and liquid is mostly absorbed.
  7. Serve and Garnish: Fluff the rice gently with a fork. Serve the rice alongside the rested pork chops. Garnish with fresh parsley or basil if desired.

Notes

  • Using bone-in pork chops adds extra flavor and moisture but bone-free can be used for easier eating.
  • Adjust seasoning packets if you prefer less sodium; half a packet is sufficient for milder taste.
  • Ensure pork chops reach an internal temperature of 145°F for safe consumption.
  • Covering the dish with foil during baking retains moisture preventing the pork chops from drying out.
  • Fluff rice gently after cooking to keep it light and separate grains.
