Description

A comforting and budget-friendly casserole, the Poor Man Husband Casserole is a creamy and hearty dish that’s perfect for a family dinner. Layers of seasoned ground beef, noodles, and a creamy cheese mixture, topped with cheddar, are baked to bubbly perfection.


Ingredients

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 (15 oz) can tomato sauce
  • 1 (15 oz) can diced tomatoes, drained

Additional Ingredients:

  • 8 oz wide egg noodles
  • 1 cup sour cream
  • 1 cup small curd cottage cheese
  • 2 cups shredded cheddar cheese


Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C). Cook ground beef, onion, and garlic until browned. Add salt, pepper, Italian seasoning, tomato sauce, and diced tomatoes. Simmer.
  2. Cook Noodles: Cook egg noodles until al dente, then drain.
  3. Prepare Cheese Mixture: Mix sour cream and cottage cheese in a bowl.
  4. Layer and Bake: In a greased baking dish, layer noodles, sour cream mixture, and meat sauce. Repeat layers. Top with cheddar cheese. Bake for 25–30 minutes.
  5. Serve: Let rest for 5 minutes before serving.

Notes

  • You can substitute ricotta for the cottage cheese or use ground turkey instead of beef.
