Marinade
- 1/2 cup pomegranate molasses
- 1 tbsp honey
- 4 cloves fresh garlic, minced
- 2 tbsp olive oil
- 2 tbsp low-sodium soy sauce
Instructions
- Preheat Oven: Preheat your oven to 400°F (204°C) and prepare a baking dish by spraying it with nonstick cooking spray to prevent sticking.
- Make the Marinade: In a bowl, whisk together pomegranate molasses, minced garlic, olive oil, honey, and low-sodium soy sauce until the mixture is smooth and well combined.
- Marinate Chicken: Place the trimmed chicken thighs into a resealable plastic bag or container along with half of the marinade. Seal and refrigerate for at least 30 minutes to allow the flavors to penetrate the chicken.
- Arrange and Bake: Transfer the marinated chicken thighs to the prepared baking dish, and drizzle the remaining marinade over the top. Bake in the oven for 25 to 30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
