Pollo Loco is a delicious Mexican-American grilled chicken dish marinated in a flavorful blend of spices, yogurt, and citrus, resulting in juicy, tender meat with a hint of smokiness.
Ingredients
Main Marinade:
- 1 1/2 pounds boneless skinless chicken thighs or breasts
- 1/2 cup plain Greek yogurt or sour cream
- 1/4 cup olive oil
- 1/4 cup fresh lime juice (about 2 limes)
- 1 tablespoon white vinegar
- 4 cloves garlic (minced)
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh cilantro (optional)
Instructions
- Prepare Marinade: In a large bowl or zip-top bag, combine yogurt (or sour cream), olive oil, lime juice, vinegar, garlic, cumin, paprika, chili powder, salt, and pepper. Add chicken and coat evenly.
- Marinate: Refrigerate for at least 2 hours, preferably overnight.
- Grill Chicken: Preheat grill or grill pan over medium-high heat. Grill chicken for 5–6 minutes per side until internal temperature reaches 165°F (74°C).
- Rest and Serve: Let chicken rest for 5 minutes before slicing. Garnish with cilantro if desired.
Notes
- Serve over rice, in tacos, or with tortillas and beans.
- Chicken can be baked at 425°F for 20–25 minutes as an alternative.
