Description

Polish Dill Soup Delight is a comforting and tangy vegetable soup featuring tender potatoes, carrots, and onions simmered in a savory vegetable broth with the distinctive flavor of dill pickles and fresh dill. Finished with creamy sour cream, this soup offers a delightful balance of flavors perfect for a cozy meal.

Ingredients

Soup Base

  • 1 tbsp butter
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 medium potatoes, diced
  • 4 cups vegetable broth

Flavorings

  • ¾ cup chopped dill pickles
  • ½ cup pickle juice
  • ½ cup sour cream
  • 1 tbsp fresh dill
  • Salt & pepper to taste

Instructions

  1. Sauté Vegetables: In a large pot, melt the butter over medium heat. Add the chopped onion and sliced carrots, cooking them for about 5 minutes until they soften and become fragrant.
  2. Simmer Soup: Add the diced potatoes, vegetable broth, chopped dill pickles, and pickle juice to the pot. Bring the mixture to a boil, then lower the heat to a simmer. Cook for 15-20 minutes, or until the potatoes are tender and cooked through.
  3. Add Creaminess and Fresh Dill: Stir in the sour cream and fresh dill thoroughly to combine. You can choose to partially blend the soup at this stage for a creamier texture or leave it chunky according to your preference.
  4. Season and Serve: Taste the soup and season with salt and pepper as desired. Serve the soup warm to enjoy its comforting and tangy flavors.

Notes

  • Partially blending the soup creates a creamy texture while leaving it chunky preserves the bite of the vegetables.
  • Use fresh dill for the best flavor, but dried dill can be substituted if necessary.
  • Adjust the amount of pickle juice depending on how tangy you like your soup.
  • For a richer flavor, you can substitute sour cream with crème fraîche or Greek yogurt.
