Instructions

  1. Prepare the Pie Crust: Preheat the oven to 400°F (200°C). Roll out one pie crust and fit it into a 9-inch pie dish. Trim the edges and refrigerate while you prepare the filling.
  2. Make the Filling: In a large bowl, combine the sliced plums, granulated sugar, brown sugar, cornstarch, lemon juice, ground cinnamon, salt, and vanilla extract. Toss gently to coat the plums evenly. Let the mixture sit for 10 minutes to allow the flavors to meld and the filling to thicken slightly.
  3. Assemble the Pie: Pour the plum filling into the chilled pie crust, spreading it out evenly. Roll out the second crust and cut it into 1/2-inch strips.
