Description

Pizza Enchiladas combine the flavors of pizza and enchiladas into a delicious fusion dish that is sure to please both Italian and Mexican cuisine lovers. These rolled-up treats are easy to make and perfect for a family dinner.


Ingredients

Tortillas:

  • 8 flour tortillas (6-inch)

Sauce:

  • 1 cup pizza sauce
  • 1/2 cup enchilada sauce

Cheese:

  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Toppings:

  • 1/2 cup sliced pepperoni or cooked Italian sausage
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped red onion

Seasoning:

  • 1 teaspoon Italian seasoning

Garnish:

  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F and lightly grease a 9×13-inch baking dish.
  2. Prepare the Sauce: Mix pizza sauce and enchilada sauce in a small bowl.
  3. Assemble the Enchiladas: Spoon sauce onto each tortilla, add cheeses, toppings, then roll tightly and place seam-side down in the dish.
  4. Add Toppings: Pour remaining sauce over the top, sprinkle with cheeses, and Italian seasoning.
