Ingredients
Pistachio Pudding Bread:
- 1 box (3.4 oz) instant pistachio pudding mix
- 1 box (15.25 oz) yellow cake mix
- 4 large eggs
- 1 cup water
- ½ cup vegetable oil
- ½ cup chopped shelled pistachios
- ½ teaspoon almond extract (optional)
- powdered sugar for dusting (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F. Grease and flour a 9×5-inch loaf pan or two smaller loaf pans.
- Mix the batter: In a large bowl, combine the cake mix, pistachio pudding mix, eggs, water, oil, and almond extract (if using). Beat until smooth and well combined, about 2 minutes. Fold in the chopped pistachios.
- Bake: Pour the batter into the prepared loaf pan(s) and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and serve: Let the bread cool in the pan for 10 minutes, then remove and cool completely on a wire rack. Dust with powdered sugar before serving if desired.
