Ingredients

For the crust:

  • 1 1/2 cups almond flour
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 4 tablespoons unsalted butter, melted

For the filling:

  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1 (3.4-ounce) box instant pistachio pudding mix
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1/4 cup finely chopped pistachios


Instructions

  1. Preheat the oven and prepare the crust: Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan. Mix almond flour, sugar, salt, and melted butter, press into the pan, and bake.
  2. Prepare the filling: Beat cream cheese and sugar, add eggs one at a time, mix in sour cream, pistachio pudding mix, extracts, and chopped pistachios. Pour over the crust.
  3. Bake the cheesecake: Bake for 55-65 minutes until just set. Cool in the oven, then refrigerate for at least 4 hours.
