Ingredients
For the crust:
- 1½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 6 tablespoons unsalted butter (melted)

For the filling:
- 3 (8 oz) packages cream cheese (softened)
- 1 cup granulated sugar
- 1 (3.4 oz) package instant pistachio pudding mix
- 3 large eggs
- 1 teaspoon vanilla extract
- ½ cup sour cream
- ¼ cup whole milk
For the topping (optional):
- ½ cup whipped cream
- 2 tablespoons chopped pistachios
Instructions
- Preheat your oven: Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
- Prepare the crust: Mix graham cracker crumbs, sugar, ground pistachios, and melted butter. Press into pan and bake for 10 minutes.
- Make the filling: Beat cream cheese, sugar, and pudding mix. Add eggs, vanilla, sour cream, and milk. Pour over crust.
- Bake: Bake for 55–65 minutes until set. Cool in the oven, then refrigerate for at least 4 hours.
- Add topping: Before serving, top with whipped cream and chopped pistachios.
