Description

Pistachio Brigadeiro is a delightful twist on the classic Brazilian sweet, incorporating rich pistachio paste and cocoa powder to create a creamy, nutty, and chocolaty treat. These bite-sized balls are rolled in finely chopped roasted pistachios, offering a crunchy contrast to the smooth, fudgy interior. Perfect for parties or as a decadent snack, this recipe yields 12 servings and can be prepared in just 25 minutes.

Ingredients

Filling

  • 1 can (14 oz) sweetened condensed milk
  • 2 tbsp unsalted butter
  • 4 tbsp pistachio paste
  • 2 tbsp unsweetened cocoa powder

Coating

  • 1 cup unsalted roasted pistachios, finely chopped
  • Additional sprinkles (optional, for coating)

Instructions

  1. Prepare the workspace: Gather all the ingredients and necessary tools, such as a saucepan, mixing spoon, butter for greasing, plate or bowl, and a chopping board for pistachios.
  2. Cook the mixture: In a medium saucepan over medium heat, combine the sweetened condensed milk, unsalted butter, pistachio paste, and unsweetened cocoa powder. Stir the mixture continuously to prevent burning and ensure even cooking. Continue stirring until the mixture thickens and starts to pull away from the sides of the pan, approximately 10 minutes.
  3. Cool the brigadeiro base: Transfer the thickened mixture to a greased plate or bowl to prevent sticking. Allow it to cool completely to room temperature, which makes it easier to handle for rolling.
  4. Shape the brigadeiros: Once cooled, grease your hands with some butter to prevent sticking. Scoop out tablespoon-sized portions of the mixture and roll each portion between your palms to form smooth, uniform balls.
  5. Coat the brigadeiros: Roll each ball in the finely chopped roasted pistachios, or if preferred, in additional sprinkles to add color and texture. Ensure each brigadeiro is completely covered for the best flavor and presentation.
  6. Serve: Arrange the pistachio brigadeiros on a serving dish and enjoy immediately or refrigerate to firm up further before serving.

Notes

  • Make sure to stir constantly during cooking to prevent the mixture from burning at the bottom.
  • Butter your hands before rolling the brigadeiros to make the process smoother and prevent sticking.
  • You can substitute pistachio paste with homemade pistachio butter if unavailable.
  • For a sweeter or more decorative touch, roll the brigadeiros in colored sprinkles instead of pistachios.
  • Store the brigadeiros in an airtight container in the refrigerator for up to 5 days.
