Ingredients
- 1 package instant vanilla pudding mix
- 1 can crushed pineapple (with juice)
- 1 container Cool Whip
- 2 cups mini marshmallows
- 1 cup shredded coconut (sweetened or unsweetened)
- 1 cup chopped pecans
Instructions
- In a large bowl, combine the instant vanilla pudding mix with the crushed pineapple, including the juice. Stir until the pudding mix is fully dissolved.
- Gently fold in the Cool Whip to maintain a fluffy texture.
- Add the mini marshmallows, shredded coconut, and chopped pecans. Fold until evenly mixed.
- Cover and refrigerate for at least 2 hours (up to 4) to allow the flavors to meld and the mixture to set.
- Before serving, garnish with extra crushed pineapple, pecans, marshmallows, and a sprinkle of shredded coconut if desired.
