- 2 tablespoons cornstarch
- ¼ cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
Oat Topping:
- 1 cup old-fashioned oats
- ½ cup all-purpose flour
- ⅓ cup brown sugar
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup unsalted butter (cold and cubed)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
- Prepare the Pineapple Filling: In a large bowl, toss the chopped pineapple with cornstarch, ¼ cup brown sugar, vanilla extract, and lemon juice until evenly coated. Pour into the prepared baking dish.
- Make the Oat Topping: In another bowl, combine oats, flour, brown sugar, cinnamon, and salt. Add the cubed butter and work it into the mixture until it resembles coarse crumbs.

Notes
- Serve warm with vanilla ice cream or whipped cream.
- Crushed pineapple can be used for a softer filling.
