Description

A delicious and easy-to-make Pineapple Crisp recipe that combines sweet, juicy pineapple with a crispy oat topping. This tropical dessert is perfect for any occasion and pairs well with ice cream or whipped cream.


Ingredients

Pineapple Filling:

  • 1 large fresh pineapple (peeled, cored, and chopped – about 4 cups) or 2 cans (20 oz) pineapple chunks in juice (drained)
  • 2 tablespoons cornstarch
  • ¼ cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice

Oat Topping:

  • 1 cup old-fashioned oats
  • ½ cup all-purpose flour
  • ⅓ cup brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter (cold and cubed)


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
  2. Prepare the Pineapple Filling: In a large bowl, toss the chopped pineapple with cornstarch, ¼ cup brown sugar, vanilla extract, and lemon juice until evenly coated. Pour into the prepared baking dish.
  3. Make the Oat Topping: In another bowl, combine oats, flour, brown sugar, cinnamon, and salt. Add the cubed butter and work it into the mixture until it resembles coarse crumbs.
  4. Assemble and Bake: Sprinkle the oat topping evenly over the pineapple. Bake for 35–40 minutes until golden brown and bubbly. Let cool slightly before serving.

Notes

  • Serve warm with vanilla ice cream or whipped cream.
  • Crushed pineapple can be used for a softer filling.
  • For a tropical twist, mix in coconut flakes.
